It has a caressing nature alongside a unique, complex bouquet. The flavour is lively and fresh.
SENSORY CHARACTERISTICS: White wine with delicate greenish highlights. The bouquet is decisive recalling tomato leaf, green pepper, sage, mint, white pear, elderflower, papaya and other exotic fruits. On the palate it has a mineral and aromatic character. This is a full-bodied wine with good acidity.
VARIETIES USED, WITH PERCENTAGE: Sauvignon 100%.
MATURING AND AGING: Left to rest on the yeasts until the spring (when it is bottled) and aged in the bottle for a few months.
FOOD PAIRINGS: Best as an accompaniment to raw and cooked fish, first courses, soups, asparagus and fried fish dishes.
